Food Truck Week: Meet Bacon Babes

Family friendly comfort food made with good ingredients -- and plenty of bacon

Bacon Babes

The food: "It's as natural as you can get," owner Staci R. Fahlsing said. But, wait. Isn't she a Bacon Babe? Yes, but Fahlsing shoots for family friendly comfort food made with good ingredients. That means organic produce, sugar-free foods, gluten-free options and grass-fed, free-range, local meats. The quarter-pound bison burger with bacon, lettuce tomato onion and bacon aioli comes on whole-grain bread from Scholar's Inn Bakehouse in Bloomington. Jalapenos, scallions, cheddar and smoked Gouda hit gluten-free mac and cheese. The bacon-ladden BLT Caesar gets a dose of Fahlsing's own smoky Caesar hybrid containing blue cheese. Fahlsing ladles maple syrup on the peanut butter/bacon/whole-grain bread sandwich. "I'm going to serve wet wipes with it because the syrup drips down your arms," she said.

The chef: Fahlsing has been a teacher for the past 19 years, lately teaching middle school cooking and social studies classes. But she never forgot how much fun she had helping a friend serve carne asada to soccer crowds 10 years ago. "Someone told me 2015 was the year of change, so I said, 'OK, I'm going to make the change.'"

The stops: Bacon Babes is a roving truck that serves Downtown, Northside, Westside or anywhere hungry folks need a meal. Find it at festivals and other special events or hire Bacon Babes to cater private functions.
