They started with a sandwich shop. Then came the full-service restaurant, hipster vibe and urban bar.

Five years later, Pure Eatery — a staple in Fountain Square — is bringing fresh food and some swagger to the suburbs.

Located in Fishers Town Commons, the recently opened eatery offers an expanded menu with more drinks, more entrees and a new appetizer to snack on.

"We've added fresh fruit to all of the kids meals," said Jason Jacobi, co-owner and general manager at Pure. "It's a little thing, but I think parents appreciate it."

For adult diners, Pure has added four new entrees to the dinner menu. Jacobi's personal favorite is the seared citrus tuna topped with melon pico de gallo.

The expanded menu will be offered at the Fountain Square location next month.

But home-grown foodies can check out the new items at the Fishers eatery now. Both locations are open from 11 a.m. to 3 a.m. daily.

More cocktails

The restaurant recently doubled its cocktail and wine list, Jacobi said, adding drinks named after neighborhood landmarks. The Conner Collins — made with Pinnacle Vodka , strawberry and basil puree, lime juice and simple syrup — could cause customers to reminisce about summer nights at Conner Prairie Interactive History Park. Other drinks with local names include the White River cocktail, Duckpin Dream and Fountain Square Mule.

Outdoor seating

Customers craving vitamin D are invited to dine alfresco on the patio at Pure of Fishers. There's no room to dine outside at the Fountain Square location, but there's plenty of room at the bar to sip on a springtime drink.

More entrees

The chefs at Pure have added pasta florentine to the menu. This vegetarian option is made with rotini noodles, spinach, grape tomatoes and white wine sauce.

For carnivores, the restaurant is serving beef stroganoff, seared citrus tuna and a rice bowl made with sauteed vegetables, chicken, shrimp, bacon or black beans. Entrees are available from 3 p.m. to 11 p.m. daily.

More to snack on

Hummus is one of the most popular items on the menu at Pure. Jacobi is a fan of their Sriracha-goat cheese blend.

Made from scratch daily, the hummus is now available on a Pure "fresh plate." The appetizer also comes with fresh fruit, homemade dressing for dipping, vegetables and warm pita squares.

Art on display

Rustic barn wood where local art by artist Jake Lee hangs came from manager Jason Jacobi's family barn out of state.

Jake Lee, mixed media artist from Toledo, Ohio, has his work on display at the Fishers location. Lee's colorful portraits of pop culture icons add life to the restaurant outfitted with barn wood from a farm in Iowa.
