And then there was one — a smokey one.

Made to make your mouth water, the Smoked Pig Patty from the Indiana Pork Association is this year’s Indiana State Fair signature food.

The pork burger is topped with Shoup’s Country Foods barbecue sauce, which is made in Frankfort, and Sechler’s Pickles from St. Joe. It earned top honors from local judges, state fair officials announced Friday.

Eight expert foodies, including IndyStar food maven Liz Biro, gathered in June to judge five entries made with farm fresh ingredients native to Indiana.

The public also helped to select this year’s signature dish that will be for sale when the fair kicks off on Aug. 7.

The winning pork burger will available at three tents throughout the fairgrounds.

“The smoked flavor really stands out and sets the sandwich off, ” said local celebrity judge Erica Pierce also known as Ms. EKlass on WRWM-FM (93.9) The Beat. “The BBQ sauce and pickles complete this delicious pork burger. Usually with pork the saltiness is overpowering, but it was perfect!”

The Indiana Pork Association’s burger beat four dishes vying to reign supreme during the “Year of the Farmer.”

A s’mores shake and muenster grilled cheese on cinnamon raisin bread from the American Dairy Association’s Indiana Dairy Bar, a maple walnut waffle sundae from the Baskin-Robbins, deep-fried apple pie bites from the Urick Concessions, deep-fried sweet corn from Barto’s Concessions and a Turkey Manhattan from Gobble Gobble will also be for sale at the fair.

Don’t forget to bring your appetite this year!
