Solid Gold Eats: Who says you can’t grill steak in winter?

Who says you can’t grill a steak in below zero temperatures? It may be February in Indiana, but skirt steaks beg to be prepared on the grill, so bundle up and grab the charcoal.

The grill rarely cools off during hot summer months and is used almost daily for meats, vegetables, and even romaine lettuce. Not only is it about being outside, the grill brings flavors and textures that cannot be replicated any other way. Some foods will always taste better when grilled and skirt steak is one of them. Found in the butcher’s shop shaped thin and long, skirt steak is a prime cut from the diaphragm and is fairly lean. It is best when cooked to medium rare or medium and marinated.

If you take the indoor iron skillet or broiler option for cooking your steak I understand, but don’t cut corners with a prepackaged grocery store marinade. You can make your own at home for very little cost and I guarantee you will never look back. Soy sauce may sound strange until you bite into a slice of this marinated steak and you taste how the soy enhances the flavor of the beef just like salt and pepper. Orange and lime juice balances the savory umami and gives you a marinade prepared in minutes. Enjoy this simple weeknight meal for a little piece of Indiana summertime.

Citrus and Soy Marinated Skirt Steak

2 cloves garlic, minced

Juice from one small orange

Juice from one lime

1/4 cup olive oil

1/4 cup soy sauce

1 teaspoon minced fresh ginger

1 teaspoon dried chives

Chopped fresh green onions

Sesame seeds

1. In a bowl, stir together garlic, orange and lime juice, olive oil, soy sauce, ginger and chives. Pour the marinade into a large plastic bag and add the skirt steak. Seal and refrigerate on

a plate for at least 30 minutes.

2. Prepare your gas or charcoal grill. Remove steak from the bag and place on the grill. Grill steak to desired doneness, about 2 minutes per side for medium rare.

3. Let sit for 5 minutes before slicing and serving. Top with chopped fresh green onions and sesame seeds.
